Looking for a delicious sandwich roll without all of the added junk? Or finding it difficult to find fresh rolls during this time of crisis? These amazingly good sandwich rolls are surprisingly simple to make with only a few easy-to-find ingredients.

COVID-19 crisis…

With the onslaught of the COVID-19 crisis and run on grocery stores, we have been wary of fresh rolls- when we can actually find them, that is. Thankfully, we live in an area that is chock-full of amazing sandwich roll makers, like Amoroso’s, Sarcone’s, and Liscio’s. These airy rolls with distinctively chewy crusts are the perfect accompaniment to your choice of deli meat. Unfortunately, it has been very difficult to find them during the novel corona virus pandemic. So we had to lean how to make our own.

On-line learning…

My children and I have been doing on-line homeschooling so it seemed appropriate to look to the internet to learn how to make fresh rolls. We found this really helpful video from the Food Wishes blog that taught us how to make these incredible French sandwich rolls for our BBQ pulled chicken sandwiches.

My children watched the video, we read the blog, and followed the steps, while filming our own video for my son to share with his class. We had a great day making the video and an even better dinner when we got to eat these incredible rolls.

Homemade Sandwich Rolls

Serves: 6 rolls Cooking Time: 4 hours

Ingredients

  • 1 package dry active yeast
  • 1.5 cups 100° F water
  • 1.5 tsp fine salt
  • 4.25 cups bread flour (all purpose can work, also)

Instructions

Pour active dry yeast into a mixing bowl of a stand mixer.

Pour 100° F water into bowl with active dry yeast.

Stir and allow to sit for a few minutes.

Add flour to mixing bowl.

Add salt to mixing bowl.

Using the hook of the stand mixer, slowly mix the ingredients together on Low for about 5 minutes or until the dough has formed into a ball and is no longer sticking to the sides.

Take dough out of mixing bowl and place on a lightly floured surface.

Form into a smooth ball and place back in the mixing bowl.

Lightly drizzle oil on top of dough ball and smooth over. Be sure to wipe oil on bowl too so the dough will not stick once it has risen.

Cover with a plate and put in a warm and draft-free spot, like your oven (not turned on, of course).

Leave for about 60-90 minutes or until the dough has risen and doubled in size.

Transfer dough to a lightly floured surface.

Press down to make a uniform rectangle about 1 inch think.

Cut in half. Then cut both halves into thirds.

Take each piece and cup your hands to roll into a smooth ball. You should have 6 balls.

Cover the 6 balls with a clean, dry towel for 15 minutes to allow the dough to rest.

Once dough has rested for 15 minutes, press out each ball so that it makes a 6-7 inch wide rectangle.

Roll each flattened rectangle very tight then roll a few times starting from the middle and working your way outward.

Pinch and roll out the ends so that they come to a point.

Place the dough on a parchment lined baking sheet and repeat for each dough ball. Be sure to only put 3 rolls per sheet and give them plenty of room.

Cover both sheets of rolls with clean, dry towels and allow to rise for 1 hour. They should double in size.

Preheat oven to 450° F.

Slice down the top-side from end to end using a VERY sharp knife. You should go about 1/4 inch deep. Don't skip this step.

Place a pan of water (filled to about an inch) just below the rack in your oven. This will help keep the rolls soft and moist.

Lightly spritz each roll with water. Place in heated oven for 10 minutes.

Take out of oven, lightly spritz again. Rotate baking sheet and place back in the oven for an additional 10 minutes or until the tops are golden brown.

Transfer to a rack and allow to cool completely before eating.

    How much yeast is in one package? My yeast comes in a jar so I need a measurement please.
