I welcomed Kristen Fitzgerald to the Make n Curate kitchen so that she could teach us how to make Kentucky Burgoo, a family recipe that has been passed down through the generations of Kristin’s family. As Kristin explains, this dish is steeped Kentucky tradition; cooking this stew is often seen as a communal event. While, it is a simple stew to make, it requires hours of cooking, so you will need to block out most of a day to make it in stages. In Kristin’s family, they make big batches of burgoo to freeze and eat over the holidays, making holiday cooking that much easier. This stew would make a welcome addition to your family holiday traditions!

Bring 4 quarts of water set to medium-high heat. Place chicken, pork, beef bones, and beef in water. Add salt, pepper, and red pepper to pot. Bring to a boil then simmer covered with a tight fitting lid for about 2 hours. After this initial 2 hours, remove chicken from pot. Cut or shred chicken meat into bite sized pieces from bones. Return chicken meat to pot. Add potatoes, onions, lima beans, carrots, green peppers, and corn. Simmer uncovered for 2 hours. After the second 2 hour simmer, add okra, tomatoes, and garlic. Add tabasco and Worcestershire sauce to taste. Simmer uncovered for additional 1.5 hours. Add chopped parsley and remove from stove. The flavor improves with standing and is best when frozen in meal-sized tupperwear for later use.Kentucky Burgoo
