Broccoli and Mushrooms

This garlicky broccoli and mushroom side dish will fight to take center stage in any meal it’s paired with.

This is one of those side dishes that makes you forget about the main dish sitting next to it on your plate. The crispiness of the broccoli is punctuated by a slightly spicy garlic olio and finished with earthy shiitake mushrooms. My mouth waters just thinking about it. I sprinkle some red pepper flakes in my olio but if you are sensitive to spice, simply omit. My kids devour this stuff, spice and all! Best thing about it is how easy it is! Cooks up in about 20 minutes!

What to serve it with?…

This pairs beautifully with roasted chicken or any other main dish that could use a garlic kick. My kids love it with The Meatloaf to End All Meatloaves and Slow Cooker Carnitas.

If you make this, better make sure that you make extra because it goes fast!

Broccoli and Mushroom with Garlic Olio

Serves: 4 Cooking Time: 20 minutes

Ingredients

  • 4 cups of broccoli florets
  • 8 oz shiitake mushrooms, sliced into 1/2 inch slices
  • 2 cloves garlic, minced
  • 3-4 tbsp extra virgin olive oil, plus more for roasting broccoli
  • 1/4 tsp red pepper flakes (optional)
  • salt to taste

Instructions

Preheat oven to 500°F.

Place broccoli and shiitake mushrooms on parchment lined baking sheet.

Pour olive oil over vegetables and toss to coat. Sprinkle with salt.

Place baking sheet in oven and cook for 20 minutes, turning baking sheet halfway through.

Add oil, garlic, and red pepper flakes to cold small skillet.

Heat skillet over medium-low heat.

Sauté garlic until golden brown and remove from heat.

Once broccoli and mushrooms are done, place in large bowl and drizzle garlic olio over veggies. Toss to evenly coat.

Serve hot.
