I love slow cooking!! I wish I knew more about it when I was working! This chicken chile verde is fantastic! I would add a bit of garlic and serranos or jalapeños to the original recipe (which you can find here courtesy of The Real Food Dietitians). The radishes are an absolute must! They counteract the tomatillos perfectly. Serve this over some cauliflower rice- I mixed some chopped romaine in with mine, which was perfect and added a bit of ‘green healthiness’ (like “truthiness”, right!?). Maybe next time, I’ll use the romaine leaves as a wrap and stuff them with the cauliflower rice and chile verde. If you are making these Whole30 compliant, find a salsa verde without preservatives or sugar (like Trader Joe’s Salsa Verde).
Slow Cooker Chicken Chile Verde

- 2 lbs. boneless, skinless chicken breast (can be 1 lb of breast and 1 lb of boneless, skinless chicken thighs)
- 12 oz jar Salsa Verde
- 4 oz can fire roasted green chiles
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1 tbsp minced garlic
- Salt and pepper to taste
- Optional toppings: fresh cilantro, lime wedges, avocado, serrano/jalepeño pepper
- Riced cauliflower
Instructions
Trim chicken and pat dry.
Season chicken with salt and pepper
Place chicken in slow cooker
In a bowl: combine salsa verde, green chiles, cumin, oregano, minced garlic. Pour over that lucky chicken
Place lid on slow cooker and cook on LOW for 4-6 hours (mine was done in 4 hrs)
Remove lid. Shred chicken with 2 forks right in the slow cooker. You can add more salt and pepper if you want.
Serve with optional toppings over riced cauliflower or in lettuce wraps.
Do a little dance because this is too easy for how good it is!
